Jen's Savory Lentils

1 Onion, diced
2-3 Cloves garlic, diced
2 Carrots, chopped bite-size
2 Celery Stalks(optional green or red peppers, spinach), chopped
1 Package lentils

Water
Potatoes, chopped bite-size
Spice options: Rosemary, thyme, and/or sage, or a pinch of cinnamon, and a teaspoon of curry, 
Salt and Pepper to taste


(prep time: 5-10 min, cook time:20 min) 
1. Saute Onion, Garlic, and diced carrots and celery in olive oil(meat can be added  and sauteed here if desired)
2. Add lentils, water and salt and seasoning according to your liking or package directions
3. Add potatoes
4. Bring to a boil.
5. Cover. Reduce heat and simmer for 20 min.


Serve with Salad and Whole Grain Bread! Enjoy!
